And the reason is easily explained, comes from a genetic mutation suffered by natural lives Rondinella that has gone from being a berry red white grapes; and also the label of "From Black to White" plays on this line, with a contrast between black and white that alludes to the particularities of Rondinella. But there is not only the Rondinella Bianco to contribute to the emergence of this intriguing white wine that comes to life even from Gold Traminer, Kerner and Incrocio Manzoni. We are the vineyards of Negrar, Illasi and Tregnago, where the plain gives way to sweet and gentle hills that introduce us to the special terroir of Valpolicella. Organic fertilization and pruning manuals, fermentation in cement tanks for 20 days and aging on the lees for at least 6 months: thus Il Bianco "From Black to White" by Zymé, an intriguing white wine is immediately striking thanks to the notes of white flowers, fruit, perennial grasses, acacia, primrose and apple, mint and vanilla.
