The Cannonau di Sardegna 'Ghirada Elisi' by Francesco Cadinu represents an expression with a full body and an indomitable spirit, a true interpretation of the wild territory of Mamoiada. This artisanal production reality cultivates 7 hectares of old vines, from which it produces just a few thousand bottles a year. The naturally low yield of the vines is compensated by the astonishing aromatic and phenolic concentration of the grapes. “Ghirada” is a Mamoiada term that identifies a vineyard plot with unique intrinsic characteristics, comparable to the French concept of cru, while “Elisi” is the name of the vineyard that provides the grapes for this label.

The Francesco Cadinu 'Ghirada Elisi' comes solely from Cannonau, grown on decomposing granite soil at 650 meters above sea level. The Elisi vineyard consists of plants about 80 years old, trained as bush vines and managed according to sustainable agriculture practices. Following manual harvesting, they have spontaneously takes place alcoholic and malolactic fermentation in wooden vats, without temperature control and with about 15 days of contact between the must and the skins. The following maturation phase takes place in French oak barrels for a period of 15 months.

To the eye, the Cannonau 'Ghirada Elisi' of the Sardinian producer Francesco Cadinu reveals an intense ruby red appearance. On the nose, there are decisive and articulated hints of red fruits and aromatic herbs, combined with vivid balsamic puffs. Full and complex taste, warm and soft, with velvety tannins that lead to a very long fruity and balsamic finish. An energetic and sincere red wine, skillful in effectively combining power and elegance. The recommendation is to pair the 'Ghirada Elisi' with succulent and flavorful braised red meats or game.
