PASSIVENTO' ROSSO BARONE MONTALTO 2023 DESCRIPTION

‘Passivento’ Rosso, produced by Barone Montalto, is a fragrant and silky wine, made from 100% Nero d'Avola grapes. Founded in 2000 and located in Santa Ninfa, in the province of Trapani, the winery manages over 400 hectares of vineyards, ranging from the Belice Valley to the Valley of the Temples and to Noto. This label stands out as one of the pinnacles of Barone Montalto's winemaking art, skillfully combining territory and winemaking mastery.

The grapes selected for 'Passivento' Rosso come from vineyards located in the Belice Valley, on alluvial soils of medium texture composed of silt, clays, and sands. Late harvesting allows for a partial drying of the clusters in the vineyard, the so-called "Passivento method", completed then in the fruit drying room, where precise ventilation management allows the grapes to reach the right level of dehydration before the pressing phase, ensuring optimal quality. The fermentation process involves maceration on the skins for about 15 days, allowing the wine to acquire depth and complexity. Subsequently, the wine continues its maturation journey in barriques where, after four months, it manages to reach the perfect balance and full expression of its organoleptic qualities.

Passivento Rosso, turning to sensory characteristics, stands out for its intense dark red color and aromatic profile of caramelized figs and ripe fruit. In the mouth, it reveals itself with a significant and well-structured body, with velvety tannins, characterized by a perfect balance between roundness and persistence. Perfect with hearty dishes based on red meat, aged cheeses, and game, this wine offers a gastronomic journey that celebrates the richness and diversity of Sicily, inviting moments of conviviality and contemplation.
