Elegant and intense, it expresses pleasant floral and fruity notes, accompanied by savoriness and freshness. Its good structure and aromatic persistence make it particularly suitable for tasting throughout the meal, paired with first courses featuring shrimp or scampi, with a slice of baked salmon, or with seafood stews in tomato sauce.
The Metodo Classico Rosé Extra Brut “Monteceresino” comes to life within Tenuta Travaglino, a historic reality of the Oltrepò Pavese territory. Always tied to local traditions, the winery produces a range of excellent versions of Metodo Classico, made with the typical grapes of Champagne. The cuvée is crafted from the grapes of the best Pinot Nero vineyards cultivated in the estate's cru of Monte CéréSino, located at an altitude of 350 meters above sea level with a southeast exposure. The soils are composed of calcareous-clay marls and sandstones, very suitable for the French grape variety. At the end of the harvest, the bunches are pressed very gently with a very brief contact with the skins. The must is then vinified in white in stainless steel tanks at a controlled temperature of 18 °C. After the blending of the base wines, the refermentation in the bottle takes place with a stay on the lees of at least 24 months before proceeding to disgorgement

Harmonious and rich, on the palate it reveals a rich and broad sip, with ripe and satisfying fruit, which finds a perfect taste balance thanks to a clear and lively mineral freshness.
