
This 'Acapulco' from Du Vin aux Liens is a bold and distinctive wine: a rosé created from an unusual blend of Gamay, Sylvaner and Gewurztraminer. The white grapes macerate for seven days as whole bunches, then are added to the Gamay which, after direct pressing, co-ferments with the rest of the mass. Ageing continues in oak to give it a vertical yet rounded mouthfeel. The nose is exuberant: tropical fruit, hints of red fruit and 'funky' notes for a wine of intriguing complexity. On the palate, it expresses vibrant freshness and a silky texture, supported by very light tannins. Perfect with vegetable dishes and fresh cheeses
