
‘Améthyste’ by Domaine des Ardoisières is one of Savoie's artisanal flagship red wines . It is the most prized wine produced by this winery, run by a great vigneron, a true guardian of the local native grape varieties. Persan and Mondeuse, two native varieties found mainly in the Savoy mountains, are vinified using whole bunches and indigenous yeasts, all completed in small used barriques. The nose immediately reveals its character: small dark fruits in jam open up to dried red flowers, among which violet emerges, and typical spicy hints give way to mineral notes typical of the mountains. The palate is taut, fresh and deeply layered, surprising for such a graceful wine with such subtle tannins. Ideal with fine meat dishes, such as sweetbreads from a Michelin-starred restaurant
