Asti Spumante "La Selvatica" from the Piedmontese winery La Caudrina is the most classic and traditional interpretation of Moscato Bianco. This ancient grape, widespread in almost all Mediterranean and European wine-producing countries in many different clones, has been cultivated for centuries in the hills of Asti. According to custom, Moscato grapes are used to produce sweet sparkling wines using the Martinotti or Charmat method. These are wines with a low alcohol content and a smooth, floral and fruity taste, which find a perfect balance between the sweetness of the residual sugar and the lively freshness of the finish, supported by a light and delicate perlage.

Asti Spumante "La Selvatica" is produced on a historic estate in the area. The Dogliotti family, owners of the La Caudrina winery, have been cultivating vineyards in the beautiful Asti area for three generations. Twenty hectares are located on the Galeisa hill, which enjoys excellent sunny and well-ventilated exposure. The predominantly calcareous soils are particularly suitable for Moscato Bianco, which in these conditions produces grapes of great aromatic finesse. Another 10 hectares are cultivated in the Nizza Monferrato area. The winery's flagship wine is Moscato d'Asti, which, faithful to tradition, expresses all the aromatic pleasure, fragrant and soft fruit ripeness and freshness of Moscato grapes.

La Selvatica Magnum from the La Caudrina winery is an excellent version of Asti Spumante, which renews the great tradition in the pursuit of quality and territorial typicality. After the first vinification, the base wine is transferred to an autoclave for the second fermentation according to the Martinotti or Charmat method. Fermentation is interrupted by lowering the temperature when the wine reaches an alcohol content of 7.0% vol., so as to leave a residual sugar content. The colour is a rather intense straw yellow, crossed by a subtle and continuous perlage. The bouquet expresses aromas of white flowers, orange blossom, citrus fruits, white peach, pear and nuances of aromatic herbs. The palate is elegant, dynamic and lively, with rich, soft, creamy fruit and an intensely fresh finish. It is one of the classics of Italian tradition, the most popular dessert sparkling wine, which has always accompanied festive occasions, especially in the prestigious Magnum format!
