
Nerina Cardile's 'Encore Ancora' is a white wine that's deeply rooted in the spirit of Etna: sandy soils at high altitude, centuries-old vines and many local grape varieties which, when combined, fully reflect the energy of the volcano. The nose moves between citrus fruits, mountain herbs and a clear savoury-mineral imprint typical of volcanic wines. On the palate, it is taut, savoury, smooth and with a subtle but persistent texture. It pairs well with fish and vegetable dishes, such as grilled swordfish or a light caponata
