
Ilenia Spagnoli's 'Pan' is a macerated white wine from Liguria to be drunk and appreciated slowly, produced by a now iconic Ligurian producer who works with old vines just a stone's throw from the sea. The nose reveals notes of ripe citrus fruits, Mediterranean herbs and a slight hint of saltiness, while the palate is taut, medium-bodied but with a textured, chewy mouthfeel and a savoury finish. It pairs well with flavourful fish dishes and white meats, such as fish soup or Ligurian-style rabbit
