The Bolgheri Rosso Superiore ‘CF11’ from the Tuscan winery Dario di Vaira is a pure Cabernet Franc that impresses with breadth and elegance, a faithful interpretation of the grape variety and the territory. This label was presented for the very first time in 2023 with the 2020 vintage, immediately receiving great appreciation from industry critics.

The ‘CF11’ Bolgheri Rosso Superiore by Dario di Vaira is made exclusively from Cabernet Franc grapes sourced from a single small plot consisting of just 11 rows, hence the abbreviation ‘CF11’. The Cabernet Franc clones, imported directly from France, are planted in clay and sandy soils characterized by an abundant presence of skeleton. The harvest is done by hand in crates with careful selection of the bunches, which are then subjected to the crushing and destemming process. This is followed by alcoholic fermentation in unglazed concrete tanks at controlled temperature, associated with about 3 weeks of maceration on the skins. Once malolactic fermentation is also completed,the mass is transferred into new French oak barriques for aging of 16 months.

The Bolgheri Rosso Superiore Dario di Vaira ‘CF11’ has an intense color between purple red and ruby. The wide and generous olfactory baggage carries with it hints of red fruits along with toasted notes due to the passage in wood. Notable vegetal and mineral hints complete the aromatic context. On the palate it is rich, soft and structured, yet balanced thanks to the balancing freshness and well-integrated tannins. The ‘CF11’ is a Cabernet Franc destined for long aging, to be paired with structured dishes based on game or red meats, such as braised or roasted dishes accompanied by sauces.
