The Pinot Noir Bourgogne from the artisan winery Domaine Chasselay is a dynamic and fragrant interpretation of one of the world's most noble grape varieties. In Beaujolais, a region almost exclusively dedicated to Gamay, Domaine Chasselay decided in 2006 to plant Pinot Noir to celebrate its proximity to the more 'classic' Burgundy, that of the famous Côte d'Or, where Pinot Noir reigns supreme among reds. The planting was carried out through a mass selection of this grape variety, and the sophisticated combination of the Beaujolais terroir and the characteristics of Pinot Noir proved to be a winning one.

Domaine Chasselay Bourgogne Pinot Noir is an expression of the homonymous variety grown organically on clayey and calcareous soils. The vines are approximately 15 years old and are located within the lieu-dit of 'Les Petits Éparcieux'. Following manual harvesting, the grapes are pressed whole in truncated cone-shaped oak vats where alcoholic fermentation occurs spontaneously thanks to the intervention of indigenous yeasts alone, accompanied by approximately 10 days of maceration on the skins. Once the fermentation process is complete, carried out without the addition of sulphur dioxide, the liquid is transferred to small oak barrels for 12 months of ageing and is finally bottled without undergoing any clarification or filtration.

The Bourgogne Pinot Noir from Domaine Chasselay has a light ruby red colour. The bouquet is characterised by fruity and floral aromas of cherry, morello cherry, raspberry, hibiscus and peony, accompanied by spicy hints of clove. On the palate, it is intense and fresh, flavourful and rather full-bodied, with velvety tannins that anticipate the persistent mineral and fragrant finish.
