Pillot Romain & Simon's Bourgogne Rouge is a straightforward, authentic red wine. The vines, which are around forty-five years old, are vinified using spontaneous fermentation, destemming and ten days of maceration in steel and concrete, followed by ageing in vats to preserve freshness and immediacy. Cherry and small fruits emerge on the nose, while the palate is agile and balanced, with great juiciness. With a style that favours drinkability and fruit expression, this is an ideal red wine to accompany meat-based first courses
