
The Cabernet Franc by Ferlat is produced in the province of Gorizia, particularly in the area of Cormons, known for producing wines that are true to the characteristics of the territory and genuine. The winery was established in 1950, but only in the 2000s did Silvano and Moreno Ferlat decide to convert the activity of selling bulk wine and start marketing bottled wine. The working philosophy is to create unique and different wines that can express a strong personality and be ambassadors of the territory from which they come; hence, a constant attention to ensure that the work in the vineyard and winery respects the natural phases of plant development and the raw materials in the winery.
The pure Cabernet Franc grapes of Ferlat's Cabernet Franc develop in a vineyard entirely cultivated under organic farming practices and with a minimal environmental impact, involving minimal human intervention and the rejection of any herbicide or chemical substance. In the vineyard, the naturally growing grasses are allowed to thrive, avoiding drastic pruning; mowing and natural mulching are preferred. The fertilizers are completely natural and come from farms where animals graze freely and undisturbed. The harvest takes place in the first decade of October and is done by hand. In the winery, the grapes are destemmed, crushed, and placed in cement tanks where alcoholic fermentation occurs thanks to the action of spontaneous yeasts; it macerates for 20 days during which manual punch downs occur several times a day, in order to extract all the contents of the berry. The liquid is separated from the skins: the latter undergo a gentle pressure with a vertical press and are then reunited with the must. It ages for 15 months in barriques where a malolactic fermentation with indigenous bacteria also takes place.
The Cabernet Franc by Ferlat presents itself in the glass with a ruby red color with intense hues. On the nose, it releases aromas of ripe berries, herbal notes, and toasted and spicy nuances.The palate welcomes a round, intense, and soft structure with a long persistence on the finish that invites drinking.
