This bottle represents the entry-level cuvée of the winery, its simplest and most immediate business card: a territory suited for the production of quality wines pairs with the characteristic grapes of the region. The vinification is that typical of the Metodo Classico, a type that has spread interestingly in Catalonia, in the immediate hinterland of Barcelona.
“Reserva 18” is a name that quickly suggests the period of aging on the lees of the wine, after the secondary fermentation in the bottle: 18 months. The grape varieties used are the classic ones for the production of Cava: Xarel.lo, Macabeu, and Parellada, all indigenous Spanish varieties representative of the territory in question. The mixed soil of limestone and clay is capable of imparting to the vines different characters of minerality and structure. The harvest is carried out manually, at the beginning of the favorable season, precisely to maintain the necessary level of acidity in the grapes. The grapes are destemmed and gently pressed. The vinification takes place entirely in steel: after the fermentation of the must, there follows a period of aging of a few months on the fine lees. The wine is then filtered and bottled for the second fermentation in the bottle. Finally, the degorgement and a dosage of about 10 grams of sugar per liter.
Cava Brut “Reserva 18” presents itself with a brilliant appearance and a delicate straw-yellow hue. The bubbles are numerous, quite fine, and persistent. The aromas it emits are fresh, all expressed in beautiful floral notes and enticing vegetal notes: camellia and freshly mown grass. There are also typical references from the Metodo Classico, with hints of yeast and bread crust. The tasting reveals itself to be pleasant and well balanced between the lively freshness and the delicate sugary residuesugary, with a creamy sensation framing everything.
