The Chablis from Domaine André Philippon is a Burgundy Chardonnay with a fresh and mineral character that best introduces the features of one of the most important denominations in the world for white wines. The producer André Philippon, who passed away in 2013, began his adventure in the wine world in 1988 following the purchase of Chateau de Fleys, with its small clos of just one hectare. The estate, dating back to the late 17th century, was the hunting reserve of the Lord of Parthenay, squire to the famous Sun King. Today, it is André's three children, Olivier, Béatrice, and Benoît, who carry on the family tradition.
Domaine André Philippon Chablis is made from only Chardonnay grapes grown on Kimmeridge soils, consisting of clay and limestone and characterized by a high presence of marine fossils. Following the harvest, the grapes are transported to the winery and gently pressed, with the resulting must being sent for alcoholic fermentation in stainless steel tanks. Once the fermentation process is complete, the wine matures for several months partly in steel and partly in oak barrels, always in search of the right balance between the freshness that steel can enhance and the softness provided by oak.
To the eye, the Chablis from Domaine André Philippon shows a pale straw yellow color. The olfactory range unfolds with sensations of white-fleshed fruit, quince, and lemon zest, accompanied by intriguing floral hints of jasmine and mineral notes reminiscent of wet stone. Very fresh on the palate, with a development that reveals gentle softness and a persistent savory-mineral trail. This Chablis is a winning choice when paired with seafood cuisine, especially with various fried dishes and first courses based on shellfish or mollusks.
