Rousseaux-Batteux's Champagne Extra Brut Grand Cru 'Le Mont' comes from a small vineyard of about a quarter of a hectare planted in the heart of Louvois. Fermented and matured in oak barrels, it then remains three years on the lees, a period in which depth and precision are developed. It is distinguished by aromas of peony, candied orange peel and hints of pastry. On the palate it is enveloping, taut and savoury, with a strong bite. Try it with savoury game dishes in fruit-based sauce
