The Chardonnay "Fallwind" from San Michele Appiano originates in Alto Adige in a reality where a cooperative of local winegrowers works with the aim of creating reliable and quality products. It was founded in 1907 and over time has always maintained a productive spirit aimed at the enhancement of the territory and the work of wine artisans. In 1978, the winemaker Hans Terzer provided the definitive imprint for a more conscious approach focused on constant innovation. Today, the more than 300 families that belong to the winery continue to work, ensuring that each wine is crafted with the utmost attention to detail, that production is sustainable and forward-looking.
The vineyards of the Chardonnay "Fallwind" from San Michele Appiano are located in the municipality of Appiano at an altitude between 420 and 500 meters above sea level. Their exposure is to the south/east-west, which is excellent because the rows are constantly hit by sunlight and the clusters reach full ripeness; the soil here is primarily composed of gravel, limestone, and moraine deposits for wines with a strong character and the plants have an average age between 10 and 30 years. The harvest is manual and takes place at the end of September with a selection in the vineyard of the best clusters. In the winery, 75% ferments in steel, while the remaining 25% in wood where malolactic fermentation also takes place. In the February following the harvest, the two parts are blended.
