Erbaluce di Caluso "Cariola" is the flagship white wine of the Piedmontese winery Ferrando. An intense and harmonious wine, pleasantly fruity, it represents the highest expression of this rare native grape variety, cultivated for centuries in the Canavese area. In recent years it has been able to win the attention of enthusiasts for its distinct personality and complex, original bouquet. The processing, still of an artisanal nature, both in the vineyard and in the cellar, gives a label of excellent quality, absolutely to be discovered. At the table, it goes very well with first courses with vegetables, fish or white meats with a delicate taste.

"Cariola" is the Erbaluce di Caluso made by a winery based in Ivrea that cultivates the historic vines of this area of Piedmont, which rises to the foothills of the Aosta Valley. Ferrando's wines are particularly prized by wine lovers for their genuine and forthright character. The cuvée comes from a careful selection of the best grapes from the estate's most vocated plots. The cool, breezy climate of the Canavese Hills and the poor, draining soils of moraine origin, with abundant pebbles, sands and gravels, are ideal for the needs of white grapes. Harvesting takes place in early October. After the soft pressing of the clusters, the must ferment in temperature-controlled steel tanks. The wine matures for a period of 4 months, partly in steel tanks and a small part in barriques, and then completes ageing within a few months in the bottle.

The Erbaluce di Caluso wine "Cariola," produced by Ferrando, is the result of a search for richness and expressive softness, also deriving from the well-calibrated use of wood, which helps to give a more mature and persuasive face to the sip. To the eye, it is a beautiful, rather intense luminous yellow. The olfactory profile is one of considerable elegance and good complexity, with aromas of white-fleshed fruit, particularly green apple and tobacco peach, hints of ripe citrus, floral nuances and officinal herbs. With a good body and aromatic breadth, the palate is rich, harmonious and anticipates a finish of good length, marked by fresh and savoury sensations.
