Cabernet Sauvignon 'Eretico' San Donatino 2020

San Donatino's 'Eretico' is a pure Cabernet Sauvignon, a rarity in the homeland of Sangiovese. The grapes are harvested late to concentrate the fruit, then the wine is treated only with neutral containers, just like the Chianti Classico wines from the winery. The nose reveals hints of blood, black spices and plenty of balsamic notes, while the palate is smooth despite the warmth and tight tannins, closing with a pleasant bitter note. Ideal with red meats and mature cheeses, it goes well with rosemary-flavoured tagliata or mature pecorino cheeses
