I Vigneri’s Etna Bianco Superiore “Palmento Caselle” is one of the most remarkable white wines produced from the Sicilian volcano. It is a 100% Carricante, made from old ungrafted vines – a rarity made possible only by the volcano’s sandy soils. Fermentation and ageing take place in barrels, with the wine completing its maturation with a year of settling in the bottle. On the nose, it opens with ripe notes of candied citrus, yellow flowers and the iodine and smoky sensations typical of volcanic wines. On the palate, it is taut and vertical, with lively freshness and great savouriness, and an austere structure that slowly unfolds on the finish. Perfect with refined dishes featuring swordfish or regional cheeses
