The Vintage Satèn “Donna Cora” is a Franciacorta that originates among the rows of Tenuta Montenisa, a historic reality of the Franciacorta territory, which has been part of the numerous properties managed by the Antinori family for about twenty years. The Chardonnay grapes come from the most suitable plots of the estate in Cazzago San Martino. The sunny hillside exposures, the suitable soils, and the mild and breezy climate allow for the harvest of ripe and perfectly healthy bunches.perfectly healthy. The grapes are pressed very gently, in order to extract only the free-run juice. Fermentation takes place in stainless steel tanks and in French oak barriques. After a few months of aging, the base wines are blended to create the cuvée. The second fermentation occurs in the bottle according to the principles of the Metodo Classico, with a sur lattes aging of at least 60 months.
The Metodo Classico "Donna Cora" by Tenuta Montenisa is a particularly prestigious Franciacorta Satèn. In the glass, it presents a light yellow color, intense and brilliant, crossed by a luminous, very fine and persistent perlage. On the nose, it expresses a bouquet of refined character, with floral aromas of hawthorn, orange blossom, aromas of pear, green apple, white peach, hints of bread crust, pastry, and pain brioche. On the palate, it is complex and enveloping, with a soft and creamy sip, broad and mature aromas, perfectly balanced by a finish characterized by a pleasant sapidity and a lively mineral freshness. It is a particularly complex Satèn and persistent, suitable for pairing with seafood first courses, baked fish or white meats.
