
San Donatino's Trebbiano Frizzante "Fermento" is a bottle-fermented wine with a direct and rustic profile, designed for dynamic and spontaneous enjoyment. Part of the must is frozen in September and reactivated in spring to start the second fermentation directly in the bottle using the ancestral method. It is fresh and fruity on the nose with notes of apple and yeast, and firm, lively and dry on the palate. It goes well with fresh sausage and simple dishes from the rural tradition, such as schiacciata with mortadella
