Collecapretta's White ‘Il Ripetente’ carries a story all of its own. The year of the harvest, an abnormally cold weather stopped fermentation. Left until the following year to ripen, it was mashed on the white grape skins to restart fermentation! The result is an 'orange' with character, with intense dried flowers, citrus and apricot gushing from the glass. Fresh and mineral, its intense savouriness is balanced by the slightly rough and round sip. Try it with Lake Trasimeno dishes, such as the typical tegamaccio
