
The Lagrein Cavit is a label that is part of the "Bottega Vinai" collection, created with the desire to provide the most discerning enthusiasts with a complete and fulfilling panorama of Trentino wines. The most important grape varieties historically cultivated in the region are offered in purity, with classic vinifications, in order to enhance their varietal characteristics and territorial typicity. The Lagrein is a grape from Alto Adige, which has adapted very well in some areas of Trentino and produces a full-bodied, structured, and rich red, endowed with remarkable expressive personality.
The "Bottega Vinai" Lagrein is produced by the most important wine realities of Trentino. Cavit is a cooperative that manages over 6000 hectares of vineyards in various areas of the region, in order to give voice to all the excellences of Trentino wine. The Lagrein grapes come from a selection of plots located in the most vocated areas for the cultivation of this historic red grape variety widespread in Trentino and Alto Adige. The vineyards are located in Valle dell’Adige, in Vallagarina, and on the cones of Besenello, on calcareous-clay and gravelly-stony soils, very draining. At the end of the harvest, the bunches are fermented in stainless steel tanks at controlled temperature with skin maceration. The wine matures for about a year in oak barriques and ages for six months in the bottle before commercialization.
The Lagrein "Bottega Vinai" Cavit is the classic expression of this grape variety with an indomitable and wild character, which always retains its typically and pleasantly rustic nature. Precisely for these peculiarities, it pairs very well with game dishes, particularly with stewed deer and roe deer meat. It presents itself with a dark ruby color with slight garnet reflections. The olfactory profile is intense and rich, with aromas of wild blackberry, cherry, blueberry, black currant, sour cherry, hints of vanilla, and soft spices. On the palate, it has a good structure, with a firm and rough tannic texture, softened by ripe and enveloping fruit and a warm and harmonious sip, which leads to a fresh, long, and persistent finish.
