
San Donatino's Sangiovese 'Libero' is a classic red wine interpreted with contemporary sensitivity. Vinification takes place in open tonneaux, with a portion of whole bunches introducing accents of carbonic fermentation that refine the palate and enhance the fruity character of this red wine. To further accentuate its freshness and fruitiness, the wine is aged exclusively in cement for about three years. The nose is reminiscent of ripe cherries, oranges and Mediterranean scrub, while the palate is juicy and fragrant, easy to drink but complex. It is ideal with roast meats and robust first courses such as pappardelle with wild boar ragù
