Quarticello Malvasia Frizzante Despina represents a lively and cheerful interpretation that makes smoothness and spontaneity its strengths. In Montecchio Emilia, on the hills that rise between Parma and Reggio-Emilia, the young winemaker Roberto Maestri cultivates 5 hectares of organic vineyards, offering genuine wines to be appreciated for their immediacy and typicity. Among these, Despina is an ancestral method from Malvasia Bianca di Candia Aromatica, a variety native to present-day Crete, an island once called Candia, which is well suited to be vinified in sparkling form.
The sparkling white Despina Malvasia from Quarticello is made from only Malvasia Bianca di Candia Aromatica grapes. The vines are located within the municipality of Montecchio Emilia, on medium-textured soils with shallow gravel. After soft pressing, spontaneous alcoholic fermentation takes place followed by the re-fermentation in bottle according to the Ancestral Method, which consists of bottling the must-wine with still some natural sugars to convert. The aging lasts between 6 and 8 months and the liquid undergoes no filtration.
In the glass, the Malvasia Despina Frizzante from the artisanal winery Quarticello reveals a dull straw-yellow color and is slightly cloudy, with pleasant bubbles. On the nose, aromas of peach and white fruit, wildflowers, underbrush, and aromatic herbs emerge, combined with hints of yeast.
