
Emiliano Fini's Malvasia Puntinata 'Lavente' is grown on volcanic tuff soils, and its name reflects this origin. After spontaneous fermentation, the wine is aged on fine lees and, thanks to a long period in the bottle, it takes on a vertical, rounded and precise character. The nose opens with floral and fruity notes typical of Malvasia, with salty nuances typical of the terroir. On the palate, it is fresh, with a texture smoothed by contact with the lees and a savouriness that lengthens the finish. It pairs well with Lazio cuisine, traditionally linked to this grape variety: an ideal pairing is supplì al telefono, where the crispy fried coating and stringy filling are mirrored in the minerality and freshness of the wine
