Maison Lou Dumont's Marsannay "En Combereau" is a Burgundy wine made from grapes grown in the vineyard that gives the wine its name. Founded in 2000, Maison Lou Dumont has become a veritable institution in Burgundy. Koji and Jae Hwa, the owners, have been following organic and biodynamic practices in the vineyard for twenty years now, with the aim of preserving the health of the soil and enhancing the expressiveness of Pinot Noir. Barrique ageing is moderate, with minimal use of new wood in order to enrich the aromatic profile without covering up the varietal identity. The bouquet is harmonious, with hints of red fruits, balsamic and spicy notes, and delicate toasted notes on the finish resulting from ageing in wood. On the palate, it is taut but composed, with chiselled tannins and a long finish. It pairs well with a risotto with fresh porcini mushrooms
