red. The harvests are manual, with selection in the vineyard of only the best bunches, which are then brought to the winery in small crates. The grapes are vinified separately, respecting the different ripening times of the three varieties. After destemming, fermentation begins at controlled temperature, with maceration on the skins lasting about 20 days and frequent pump-overs and punch downs. After racking, the wines are transferred to new French oak barriques. The blending process then takes place, and Maurizio Zanella continues the aging in wood for about 12 months before being bottled. Each bottle leaves the winery numbered, to guarantee the exclusive quality of the wine and its traceability.
