The Mercurey Blanc from Pillot Romain & Simon is a Chardonnay that combines structure and finesse. The vines, with an average age of sixty years, are rooted in calcareous, pebble-rich soils and are vinified using spontaneous fermentation and direct pressing. Ten months of ageing in wood, some of which is new, gives balance, roundness and structure without overpowering the fruit. With a classic and measured profile, the nose reveals citrus fruits and white flowers, with slight hints of vanilla, while the palate is soft, round and precise.
