
The Mercurey Rouge by Pillot Romain & Simon is a traditional red wine that expresses the authentic character of the Côte Chalonnais, the sunniest corner of Burgundy. Destemming followed by brief maceration in steel and cement, then aged for fourteen months in used barriques: a traditional and straightforward solution to produce an elegant red wine that is intense but not particularly extractive. The nose reveals ripe red fruit, typical violet and hints of undergrowth. On the palate, it is balanced, warm but also fine and long-lasting. Ideal with red meat and French cuisine
