
The Merlot Bottega Vinai Cavit is part of a range of labels created to enhance the main grape varieties stoically cultivated in the region, in the name of purity and expressive elegance. The grapes are carefully selected from vineyards cultivated in the most suitable areas of the estate, to always offer the highest quality. Merlot arrived in Trentino towards the end of the 19th century and in the warmer and sunnier areas of the lower hills, it found an ideal terroir. It is a red made in the best style of great Bordeaux wines and expresses a harmonious character, with rich fruity aromas, enriched by tertiary notes derived from long aging in wood.
The red Merlot Bottega Vinai is born in two different areas of the Cavit estate. In the Vallagarina area, the vineyards are cultivated on hills well exposed to the sun, consisting of ancient alluvial cone deposits, characterized by very draining soils, rich in limestone deposits, mixed with clays. In the hilly area surrounding the city of Trento, on the other hand, the vineyards are located on glacial moraine terraces, rich in clay and pebbles. The two areas were chosen, not only for their suitable soils but also for the particularly mild climate and the presence of good temperature variations, which allow for harvesting perfectly ripe grapes, which are picked towards the end of September. The best bunches are destemmed and fermented in stainless steel tanks at a controlled temperature of 28 °C, with a maceration on the skins of a couple of weeks. Before bottling, the wine rests for 15 months in French oak barriques and for a few months in large casks.
The Merlot Bottega Vinai Cavit wine is one of the most representative reds of Trentino and certainly among the most loved by enthusiasts in search of an enveloping drinking pleasure. It is the ideal bottle to bring to the table to accompany roasted meats, mixed grills, or game on the spit. In the glass, it presents a dark ruby red color with bright reflections. The olfactory profile is characterized by aromas of small dark berries, black currant, blueberry, blackberry, ripe cherry, red plum, soft spicy sensations, hints of vanilla and noble woods. On the palate, it has a good structure, with ripe fruit, velvety tannins, which make the sip particularly harmonious and satisfying. The finish is long and persistent, with a return of pleasant fruity sensations.
