The “Clairet” Ottin presents itself as a fascinating journey into the winemaking tradition of Valle d'Aosta. This wine, a historic blend made predominantly from Nebbiolo grapes and Neiret, revives ancient flavors and revisits the original “chiaretto,” celebrating the finesse, lightness, and delicate color that define its essence. Cantina Ottin stands out for its commitment to enhancing the local territory and its unique characteristics, transforming wine into an authentic expression of the mountain landscape. The name “Clairet” evokes a forgotten era and brings a centuries-old tradition back to life, offering consumers a timeless experience.

Located between the municipalities of Quart and Saint-Cristophe, at an altitude of 650 meters above sea level, the winery that produces this “Clairet” Ottin stands on challenging terrain characterized by steep slopes, a very high stone content, and morainic, sandy soils. Cultivation techniques prioritize sustainability and environmental respect, with particular attention to organic farming. Harvesting is carried out manually, followed by a 15-day drying period in a controlled cell, which gives the wine remarkable depth and complexity. A short cold maceration precedes alcoholic fermentation, which lasts about 10 days, before the wine moves on to maturation for 24 months in French oak tonneaux, where it evolves and develops rich aromas and flavors. As a final step, the wine rests for an additional 12 months in bottle.
