Château Simone Palette Rosé is made from a blend of Grenache (45%), Mourvèdre (30%) and Cinsault (5%), combined with 20% so-called 'secondary' grapes, including Syrah, Castet, Manosquin, Carignan and various Muscatels. The grapes, cultivated without the use of insecticides and chemical herbicides, come from hillside vineyards over 50 years old, facing north and planted on soils rich in limestone. Harvesting is done entirely by hand when the grapes have reached full ripeness, with a double selection of the bunches, both in the vineyard and in the cellar. This is followed by gentle crushing, partial destemming and soft pressing, with the must thus obtained then combined with a percentage of must taken using the "salasso" technique. Alcoholic fermentation occurs spontaneously and is followed by several months of ageing in small wooden barrels on the fine lees.
Château Simone's Palette Rosé has an intense cherry pink colour. The refined and complex aromatic bouquet is described by notes of red fruits and wild roses, followed by deep hints of spices such as cinnamon and hints of iodine on the finish. Taste of great structure and breadth, characterised by a marked fresh-sappy verve capable of lending verticality to the progression, anticipating the very long persistence on the finish.
