
Ippolito 1845's Pecorello showcases an ancient native Calabrian grape variety that the winery is proud to have helped rediscover. To best preserve the character of the variety, the grapes are processed exclusively in steel tanks in the winery. The nose reveals notes of ripe citrus fruits and yellow fruits such as apricot and peach, with hints of iodine on the finish. On the palate, it is vibrant and balanced with a marked persistence. Perfect with Mediterranean fish dishes such as sea bream baked in foil with cherry tomatoes
