PECORINO 'PISTILLO' PODERI SAN LAZZARO 2024 DESCRIPTION

The Pecorino “Pistillo” by Poderi San Lazzaro is a fragrant and satisfying everyday white, distinguished by elegance and extraordinary quality-price ratio. One of the most valid indigenous grape varieties in Italy finds a centered and satisfying dimension in the version proposed by Poderi San Lazzaro, a Marchigiana reality located in Offida, a true area of choice for Pecorino. The winery, led and founded by Paolo Capriotti, currently has just over 8 hectares of vineyards, dedicated to the indigenous grape varieties of the area, namely Pecorino, Passerina, Montepulciano, and Sangiovese, outlining a picture of great classicism also regarding work in the vineyard and in the cellar, where human intervention is contained and reasoned. The decision to adopt organic farming in the vineyard seals a meticulous and attentive work, which allows for clear territorial expressions.

The “Pistillo” is obtained from pure Pecorino grapes, coming from vineyards located in Offida that rest on clay-limestone soils. In the vineyard, as already mentioned, organic farming is adopted, maintaining yields rather contained with the aim of privileging the quality of the manually harvested grapes. In the cellar, alcoholic fermentation continues in steel containers and aging of 4 months in barrique, which gives the wine softness.

The Pecorino “Pistillo” presents itself in the glass with an intense and luminous golden yellow hue. Fine and varied nose, marked by hints of lime, golden apple, acacia, and flint. The breadth of the olfactory profile is confirmed in a sip that combines softness, sapidity, and a comfortable structure. A versatile liquid, to be enjoyed with multiple preparations based on fish, vegetables, or delicate meats.

When to open
To enjoy an artisanal wine at its best, we recommend you to let it 'breathe' at least 15-30 minutes before serving
When to drink
Wine good to drink now, but that can have a beautiful evolution after resting for a while in your cellar
Glass
Medium open goblet
Perfect for young and medium bodied white wines which don't require excessive oxygenation to open. The opening, slightly tighter than the body of the glass, favors the concentration of aromas towards the nose, enhancing the perception of aromas and limiting the dispersion
Longevity
You can leave it to rest in the cellar comfortably for 2-3 years
