
The Pithos Rosso by Cos born of love for the land, from a strict and convinced application of the principles of organic agriculture. Stems from the desire to return to the land, to give back to nature a wealth valued and passed on to new generations. The idea of returning to the clay as a container for the fermentation and aging of wine. These are the elements of philosophy hinges of Cos, a wonderful reality ragusana that for years gives products unique, always appreciated and recognized at international level. A beautiful territoriality which is transferred into the cup in an exemplary way. We are in the resort Bastonaca, in Vittoria, in the south-eastern Sicily, on vineyards situated at 250 meters above sea level, characterized by soils of medium texture, rich sands, limestone and silica, on vines that have now 30 years of age. The Pithos Rosso comes from Nero d'Avola and Frappato di Vittoria harvested between late September and early October, fermented with natural yeasts and aged for 10 months in terracotta amphorae. An evolution that offers intriguing notes of cherries and violets, anchovies, pickled, with a closing herbaceous very fine and thin; the taste is fresh and fruity, has an infinite persistence. There are those who love him with a tasty fish cuisine rather than with a Ragusano seasoned and who loves him as a sipping wine...
