
Sophie Schaal's Riesling is a refined version of this grape variety. It is produced in southern Alsace, using organic farming methods, on clay soils that retain water, allowing the grapes to ripen slowly and evenly. The wine has a very expressive bouquet ranging from hints of tropical fruit and lime zest to flint on the finish. The palate is taut, very long, with a persistent salty finish and marked freshness. Perfect with fish-based starters, such as salmon carpaccio with citrus and dill
