“Maur & More” is born from a blend of Grenache (80%) and Cinsault (20%), two ancient local varieties that have been thriving in Provence for centuries. Both grapes come from vineyards close to the gulf, the ones nearest to the sea, with roots in sandy and schistose soils. Once harvested, a gentle pressing and brief cold maceration of the skins follow, a technique that achieves rosy hues. The winemaking, carried out in the deep cellars of the winery, involves fermentation in steel at a controlled temperature. Aging continues in steel tanks for several months, without using wooden barrels, thus preserving the fragrant and varietal aromas of the grapes.
