
Giacomo Baraldo's Sangiovese 'Vineyard Ferment 0.0k Tullio' is produced from grapes grown in the Bossolo vineyard, which, in addition to the vineyard, also houses the vats where the grapes are fermented, a technique that Giacomo is the only one to use in Italy, if not in Europe. Fermenting the freshly harvested grapes allows the maximum freshness of the fruit to be extracted. The nose develops a dark profile, with kora, blueberry, juniper and delicate spicy nuances on the finish. On the palate, it is taut and dynamic, with silky tannins that make it 'Pinot-like' to drink. Ideal with structured meat dishes, it pairs perfectly with a Florentine steak or stewed wild boar
