
The Sassaia by Maule is a clear example of wine from the territory, a sparkling fusion of sapidity and freshness. A showman, as well as a great craftsman, the figure of Angiolino Maule is indissolubly linked to the world of wines produced spontaneously and without any chemical intervention. The need to provide a manifesto that clarified the production methods of the winemakers led Angiolino to found Vinnatur, an association that is now a reference point for artisanal wines, rigorous in its admission criteria. Born at the end of the 80s with only 6 hectares of land, La Biancara, located in Gambellara in the province of Vicenza, now boasts 11 hectares of property and 4 in rental, most of which is composed of volcanic soil. Liquids that excite for their spontaneity and three-dimensionality, but above all, alive.
The white Sassaia comes from a blend consisting of 85% Garganega and the remaining 15% Trebbiano. The vineyards are located on the hills of Sorio and rest on soils rich in minerals and volcanic debris. After a manual selection of the grapes, the bunches are taken to the winery where fermentation occurs, strictly initiated by indigenous yeasts and takes place in 30hl oak barrels without temperature control. It undergoes neither filtration nor clarification, and is bottled in April-May of the year following the harvest.
The Sassaia wine shows itself in an intense, enchanting straw-yellow dress. The first olfaction reveals an extremely shy and essential wine, which needs time before it begins to reveal balsamic puffs and mineral whips, reminiscent of flint stone being rubbed. Composed and extremely refined, on the palate the liquid reveals itself in a mixture of sapidity and freshness, in a disarming expression of purity. It finds its balance with vegetable-based dishes, such as pasta dressed with zucchini and shrimp or spinach pies.
