
The Sauvignon Bottega Vinai by Cavit is part of a collection of labels created to highlight the best excellences of Trentino. It is born from a selection of the best grapes from the famous French grape variety, cultivated in different plots, which always guarantee an excellent quality level and allow for the production of balanced wines that faithfully reflect the varietal characteristics of the grape. Sauvignon blanc arrived in the region towards the end of the nineteenth century and today represents one of the most widespread white grape varieties capable of expressing itself at excellent quality levels.
The wine Sauvignon Bottega Vinai is the result of a selection and acquisition process that has led the Cavit winery to manage over 6,000 hectares of vineyards, cultivated in the most suitable areas of the region. The grapes are harvested towards the end of September, in the vineyards located in the beautiful hilly area of the Valle dei Laghi, characterized by a particularly mild and breezy climate, very suitable for perfectly ripening the Sauvignon blanc. Before vinification, a cold maceration of the grapes for 12 hours, in order to favor a better extraction of the aromatic components. At the end of the soft pressing, the must ferments in temperature-controlled stainless steel tanks. Before bottling, the wine matures for a few months in steel tanks, to preserve the fragrance of the varietal aromas intact.
The white Sauvignon Bottega Vinai, from the Trentino winery Cavit, perfectly expresses the marked and decisive personality of the great semi-aromatic French grape variety. Due to its characteristics, it is perfect to enjoy with seafood appetizers, pasta with scampi, with a risotto with aromatic herbs or mushrooms. In the glass, it presents a light yellow color with bright golden reflections. The bouquet is particularly intense and elegant, with aromas of flower elder, citrus peel aromas, grapefruit, white-fleshed fruit, hints of tropical fruit, notes of sage, boxwood, tomato leaf, and aromatic herbs. On the palate, it offers intense and rich aromas that harmoniously blend ripe fruit with the typical vegetal notes of the grape variety. The finish is very persistent, savory, and of great freshness.
