SAUVIGNON 'FALLWIND' SAN MICHELE APPIANO 2024 DESCRIPTION

The Sauvignon “Fallwind” from San Michele Appiano originates in Alto Adige in one of the most renowned wineries in the area. The winery is the result of a synergistic and coordinated effort by local winemakers who since 1907 have shared their knowledge and experience with the community to produce a wine of indisputable quality. The working philosophy focuses on enhancing the intrinsic characteristics of the territory and the need to promote the native grape varieties present. Today, the cooperative counts about 304 families from different locations in the province of Bolzano; they cultivate 380 hectares fully planted with vines, mostly located in the municipality of Appiano, guided by the wise experience of president Klaus Pardatscher.

The grapes of the Sauvignon “Fallwind” from San Michele Appiano grow at an altitude of about 600 meters above sea level. “Fallwind” is the characteristic wind of this area and helps to give the final product great aromatic expression and longevity. The exposure is to the southeast, excellent because the sun's rays consistently penetrate between the rows, ensuring perfect ripening of the grapes; the soil is composed of gravel and limestone for wines with a character structure. The harvest is done manually at the end of September and already in the vineyard, a selection of the best bunches is carried out. In the winery, alcoholic fermentation takes place in steel, as does the aging on the lees until the end of February of the following year.

The color of the Sauvignon “Fallwind” from San Michele Appiano is a light yellow with bright reflections. The bouquet of aromas recalls unripe yellow-fleshed fruits such as pineapple and green apple, gooseberry combined with elderflower and wildflower honey; on the palate it is fresh, balanced, and stimulating with a pleasant final minerality that invites drinking. It pairs perfectly with dishes based on asparagus, but is also interesting with sushi and sashimi, white meats cooked with Asian recipes, and specialties of Tyrolean tradition.
