
The Soave Classico ‘Foscarino’ from the renowned Veronese winery Domini Veneti is a typically mineral expression of the volcanic Soave region, produced specifically with grapes from the ‘Foscarino’ plot. This cru, located in the municipalities of Soave and Monteforte d'Alpone, owes its name to the characteristic appearance of the area, marked by vineyards surrounded by particularly dense vegetation. Hence the reference to the Latin term “fuscus,” meaning “dusky” or “dark.” It is probably the most renowned subzone in the entire Soave denomination, formed by three volcanic cones named Foscarinetto, Boccara, and Monte Foscarino.
Domini Veneti ‘Foscarino’ Soave Classico is a pure Garganega from vines cultivated on volcanic soils characterized by a clay-loam texture, located at an altitude of almost 300 meters above sea level. Following the harvest, the grapes are immediately transported to the winery for gentle pressing, followed by the alcoholic fermentation of the must in stainless steel tanks. After the fermentation process is complete, the liquid matures for several months, with 90% of the mass remaining in stainless steel and the remaining 10% in French oak barriques.
The ‘Foscarino’ Soave Classico from Domini Veneti has an intense straw yellow color. Aromas of peach, elderflower, almond, and eucalyptus define the aromatic range, complemented by mineral accents. The taste is balanced and dynamic, with lively freshness accompanying the mineral and balsamic finish. Staying within the local culinary tradition, this Soave pairs wonderfully with baccalà alla vicentina or risi e bisi, a tasty dish made with rice and peas.
