
The Spumante Brut ‘Seradina’ by Cavalleri is the label inspired by the exaltation of the finesse and elegance of the Metodo Classico. It is a Blanc de Blancs Vintage made with pure Chardonnay, which, thanks to a particularly delicate and creamy perlage, expresses extraordinary taste refinement. It seduces with its floral and fruity aromas, characteristic of the noble Burgundy grape, which has found in the lands of Franciacorta the climate and soils to produce excellent sparkling wines. Precisely for its subtle and light profile, it is the ideal bottle to enjoy at aperitif time or to accompany seafood appetizers or raw fish.
This ‘Seradina’ Spumante, which within the range of labels from the Brescia winery Cavalleri, stands out for its particularly elegant personality. It is produced by one of the historic brands of the area, which began producing Metodo Classico in the late 1960s. Today, the name Cavalleri is synonymous with excellence, and the winery manages about forty hectares in the hilly area of Erbusco, true heart of Franciacorta. At the end of the harvest, the Chardonnay grapes are gently pressed, and the must is fermented 75% in stainless steel tanks and the remaining 25% in wood. The base wines rest for a few months, and after creating the final blend, the second fermentation takes place in the bottle according to the Metodo Classico, with a minimum aging on the lees of 36 months.
