
Tenuta Volpare's Spumante Trento Dosaggio Zero is a sparkling wine with a fresh and mineral soul that can boast organic certification. In 2015, Francesco Ronga left his management career to devote himself full-time to the family vineyards in Oltrecastello. Francesco uses the most modern technology in the industry to properly process the Pinot Noir and Chardonnay grapes grown on the estate's 10 hectares. The labels of the Volpare estate, depicting a fox, are illustrated by Ima Montoya, a well-known Spanish painter.
The Trento Spumante Dosaggio Zero Tenuta Volpare is made from a blend of Pinot Noir (70 per cent) and Chardonnay (30 per cent), varieties that are organically grown certified on the hills east of Trento. Here the rows, planted in 2009 with northern exposure, benefit from the altitude of around 280 metres above sea level and the moraine origin of the soils. The grapes are harvested by hand with a rigorous selection of the bunches, which are then transferred to the cellar for white vinification. Alcoholic and malolactic fermentation takes place in stainless steel tanks, and once ready, the sparkling wine base is bottled for frothing, according to the Metodo Classico. Maturation on the lees in glass lasts 43 months, at the end of which the wine is disgorged and topped up with the same wine, i.e. without dosage.
Tenuta Volpare Trento Spumante Dosaggio Zero has a brilliant straw-yellow colour with fine, persistent effervescence. Hints of white-fleshed fruit, lemon peel, yellow flowers and delicate hints of toasted almond describe the nose. Fresh, savoury, harmonious palate with a pleasant finish evoking citrus and mineral sensations.
