
The Valpolicella Classico Superiore from the I Saltari winery is produced on the terraced hills of Turano, on calcareous soils rich in stones on the surface that favour low yields and high aromatic concentration. The harvest involves several stages: first the ripe grapes are picked, followed by the slightly overripe ones, then once in the cellar, each is vinified separately. The nose reveals notes of dark fruit jam along with hints of aromatic herbs, spicy and toasted notes.
