This Vin Santo del Chianti Classico “San Niccolò”, produced by the Castellare di Castellina winery, is characterized by a quality that makes it extremely satisfying to drink: balance. It is indeed a wine that comes from the drying of Malvasia Bianca and Trebbiano Toscano grapes, which however does not present itself either too sweet or too dry, faithfully interpreting the most classic tradition of this type of wine. The “San Niccolò” is a Vin Santo del Chianti Classico that arises from the happy union between two grape varieties, Malvasia Bianca and Trebbiano Toscano. The vines of these two varieties are cultivated using the guyot system, both simple and double, and their roots sink into vineyards located about 350-400 meters above sea level, characterized by the presence of fine soil, with little skeleton. The grapes, once they arrive at the vinification facilities of Castellare di Castellina, are dried in a ventilated environment, ventilated, before proceeding with a long fermentation in oak barrels. Also in these containers, the aging continues for about 60 months, after which it is ready to be bottled.
The Vin Santo del Chianti Classico “San Niccolò” reveals itself to the eye with a bright and luminous color, reminiscent of amber tones. The nose resonates with rich and intense notes, where dried fruit alternates with candied fruit and sensations that recall spices, barley, and caramel. On the palate, it has excellent body, tactile and velvety, with a perfect balance between sweetness and freshness; the sip ends with a finish characterized by a spicy aftertaste. A bottle with which the Castellare di Castellina winery confirms its abilities in expressing the terroir of Tuscany even with a type, that of Vin Santo, resulting from an exceptionally meticulous process.
