The Vin Santo di Montepulciano "Occhio di Pernice" is made by the Avignonesi winery using pure grapes from a classic Tuscan variety, Sangiovese. The grapes are carefully selected during the manual harvest, and once collected, they are dried for several months inside the drying room, arranged on neat rush mats. The maturation then takes place for 10 years in small French oak barrels. During this period, the wine oxidizes naturally, remaining in contact with the mother, indigenous yeast whose age exceeds one hundred years.

The Occhio di Pernice is a Vin Santo di Montepulciano that, upon visual examination, presents itself with a brown color, characterized by slight amber reflections. Stunning the nose, almost moving in presenting fine and elegant notes, which, from the fruity, shift towards panforte and sweet spices. On the palate, it is immense, fascinating, with a pleasantly sweet sip, in perfect taste-olfactory balance; it ends with an exceptionally long finish.
