
Abbazia San Giorgio's 'Joe Pesk' is a macerated Zibibbo, a dry, Mediterranean and deep wine. The wonderful and traditional Pantelleria saplings, a vine training method typical of the island, have an average age of 90 years and produce grapes of great concentration! All this is accentuated by two months on the skins, a process that gives intensity and an intriguing colour. The nose reveals ripe apricot, peach and mineral accents, while the palate is dry, very salty and with present but integrated tannins. It pairs well with mature cheeses and spicy dishes such as Pantelleria-style fish couscous
